Excellent Eats!

As I have mentioned previously, we have been participating in a fruit and vegetable co-op.  It has been an amazing adventure.  Here are just a few of our favorites that we would have otherwise not tried.

Roasted Swiss Chard with Feta  Spinach who?  Holy swiss chard - I love it!













Bok Choy Salad  We made this one for Easter and it was a huge hit.













Creamy Potato Leek Soup  Comfort food at its finest!













Green Risotto with Fava Beans Preparing the fava beans was a lot of work, but fun!

 

Orange-flesh Honeydew Melon  I could have sworn it was a honeydew melon in my basket.  To my surprise, I cut it open to find a cantaloupe.  I had to google it to be sure it was not a mistake.
